「昨日飲んだときは、すごく甘く感じたのに、今日は少し苦く感じる。」

「いつもと同じ豆、同じ淹れ方のはずなのに、なんだか味が違う。」

コーヒーを日常的に飲んでいると、そんな経験をすることがあります。

実はこれは、決して珍しいことではありません。

コーヒーの味は、豆だけで決まるものではなく、 淹れる環境や豆の状態、そして飲む人自身の感覚によっても変化します。

コーヒーは、毎日まったく同じではない

コーヒーには数多くの香りや味わいの成分が含まれています。

甘さ、酸味、苦味、香り、口当たり、そして飲み込んだあとの余韻。

それらのバランスによって、私たちは一杯のコーヒーを「おいしい」と感じています。

しかし、そのバランスはほんの少し条件が変わるだけでも変化します。

1.焙煎してからの日数

コーヒー豆は、焙煎したあとも少しずつ変化しています。

焙煎直後の豆からは二酸化炭素が放出され、その後、時間の経過とともに豆の状態が落ち着いていきます。

そのため、焙煎翌日と一週間後では、同じ豆でも香りや味わいの印象が変わることがあります。

最初は少し輪郭が硬かったコーヒーが、数日後には甘さが感じやすくなったり、 反対に時間が経つことで華やかな香りが少しずつ穏やかになったりします。

コーヒー豆には、いわば味わいの時間経過があります。

2.挽き方のわずかな違い

コーヒー豆をどれくらい細かく挽くかによって、お湯に溶け出す成分の量は変わります。

細かく挽けば抽出されやすくなり、粗く挽けば抽出は穏やかになります。

家庭用のグラインダーでは、まったく同じ設定にしていても、 豆の状態やグラインダー内部に残った粉などによって、わずかな違いが生まれる場合があります。

その小さな差が、酸味の感じ方や甘さ、苦味の強さに影響することがあります。

3.お湯の温度

お湯の温度も、コーヒーの味に大きく関係します。

一般的には、温度が高くなるほどさまざまな成分が抽出されやすくなります。

例えば、いつもより少し熱いお湯で淹れれば、味が強く感じられたり、 反対に少し低い温度では、やわらかい印象になることがあります。

5.水も味を変える

6.実は「自分自身」も毎日違う

Coffee Is Never Exactly the Same Every Day
