コーヒーを飲んだとき、

「チョコレートのような香りがする」
「少し柑橘っぽい」
「花のような香りがする」

そんな表現を聞いたことはありませんか?

コーヒー豆しか使っていないのに、果物や花、ナッツ、スパイスのような香りを感じる。

考えてみると、とても不思議です。

では、コーヒーには一体どれくらいの香りが存在するのでしょうか。

コーヒーからは、1000種類を超える揮発性成分が見つかっている

コーヒーの香りは、ひとつの成分からできているわけではありません。

現在の研究では、コーヒーから1000種類を超える揮発性化合物が確認されています。

もちろん、そのすべてを私たちが一つひとつ「香り」として識別できるわけではありません。

ごく微量でも強く感じるものもあれば、たくさん含まれていても香りへの影響が小さいものもあります。

それらが複雑に重なり合うことで、私たちが感じる「コーヒーらしい香り」が生まれています。

つまり、

コーヒーの香りを「全部で○種類」と単純に数えることは、実はできないのです。

コーヒーの香りを言葉にすると「110の特徴」

では、プロはどうやって、その複雑な香りを表現しているのでしょう。

コーヒーの研究機関World Coffee Research(WCR)が開発した「Sensory Lexicon」では、コーヒーに現れる感覚的な特徴が110の項目に整理されています。

そこには香りだけではなく、味や口当たりなども含まれています。

たとえば、

  • ジャスミン
  • ローズ
  • ブラックベリー
  • レモン
  • オレンジ
  • ピーチ
  • バニラ
  • アーモンド
  • チョコレート
  • シナモン

など。

私たちが普段口にする食べ物や植物を思わせる、さまざまな表現があります。

「レモンの味が入っている」わけではありません

ここで、ひとつ大切なことがあります。

コーヒーの説明に、

「レモン」
「ピーチ」
「ジャスミン」

と書かれていても、実際にそれらがコーヒーに加えられているわけではありません。

The aroma of coffee does not come from just one single compound.

Research has identified more than 1,000 volatile compounds in coffee.

Of course, this does not mean that we can individually recognize every one of them as a distinct aroma.

Some compounds can have a strong sensory impact even when present in extremely small amounts, while others may have only a minor influence on the overall aroma.

These compounds overlap and interact in complex ways, creating what we recognize as the distinctive aroma of coffee.

In other words,

it is not really possible to say that coffee has exactly a certain number of aromas.

Describing Coffee Through 110 Sensory Attributes

So how do coffee professionals describe such a complex range of aromas and flavors?

The World Coffee Research (WCR) Sensory Lexicon organizes the sensory characteristics found in coffee into 110 attributes.

These include not only aroma, but also taste and texture.

For example:

  • Jasmine
  • Rose
  • Blackberry
  • Lemon
  • Orange
  • Peach
  • Vanilla
  • Almond
  • Chocolate
  • Cinnamon

These are just some of the many words used to describe aromas and flavors that remind us of familiar foods, fruits, flowers, and spices.

It Does Not Mean That Lemon Has Been Added to the Coffee

There is one important point to understand.

When a coffee description says:

“Lemon”
“Peach”
“Jasmine”

it does not mean that these ingredients have actually been added to the coffee.

Instead, it means that the aroma or flavor we experience from the coffee

reminds us of the aroma of lemon stored in our memory.

Whenever we smell or taste something, our brain naturally compares that sensation with aromas and flavors we have experienced before.

That is why one person might drink the same coffee and say:

“It reminds me of orange.”

while another might say:

“It feels closer to mandarin.”

Neither person is necessarily wrong.

Aroma Tells the Story of Coffee from Origin to Cup

Another fascinating thing about coffee is that all of its aromas are not already fully formed inside the green coffee bean.

Variety.
Terroir and altitude.
The ripeness of the coffee cherry.
Processing method.
Fermentation.
Drying.
Roasting.
And finally, brewing.

All of these factors contribute to the aroma that eventually reaches the cup.

During roasting, heat causes numerous chemical reactions inside the coffee bean, creating many aromatic compounds that were not present in the same form before roasting.

The brightness of fresh fruit.
The sweetness of caramel.
The rich aroma of nuts or chocolate.
